I was about to make breakfast yesterday, that was really ending up to be brunch and I just didn’t feel like making waffles or pancakes. So instead I decided to make little pancake muffins that thebkids could dip into their syrup while watching cartoons for an hour.
It was so much easier than making pancakes or waffles, and I could just put the rest in the freezer for breakfast throughout the week like I do with the mini pancakes I make.
I used almond milk in my recipe, and mini chocolate chips. But I think next time I might do have chocolate chip and half blueberry or Raspberry.
Pancake Muffins

Servings 12
Ingredients 1x2x3x
- 2 cups all purpose flour
- 2 Tablespoons granulated sugar
- 1 teaspoon salt
- 4 teaspoons baking powder
- 2 large eggs
- 1 1/2 cups milk
- 1/2 cup butter melted
- 1 tsp vanilla extract
Instructions
Add all ingredients to a bowl and mix. You can separate you pancake mix into different bowls if you’d like different mixing or leave it in one bowl.
You can add in sprinkles, fruit (frozen/fresh) mini chocolate chips, brown sugar. Whatever you like.
Spray down a mini muffins pan and begin to scoop in your pancake mix into the muffin pan.
You can add mini chocolate chipsnon top or a sprinkle of cinnamon sugar, sprinkles or salt.
Bake until the tops ate just golden brown. Once done pair with little cups of syrup for dunking, whip cream. However you like.

I don’t have a time for how long to cook, as my oven is old and I go based how my food looks and not really how long it takes.
