Last week we had our weekly Disney movie night on Sunday, as we use Saturday night for date night. So we watched Moana Sunday night, and I made a whole day out of it with the foods we had for each meal.
For breakfast we had Loco Moco, then we had spam and rice for lunch, and then Hawaiian chicken with rice and mango coconut smoothies, with heart teffiti cookies.
This post is about the Loco Moco recipe we used. This was very good, Chis and even the kids really liked the meal, though the kids preferred their foods to be sepoerated with the gravy on just the meat and they definitely couldn’t have an egg touching anything.
We used a gravy packet instead of home made gravy this time, as gravy is always a struggle for me and i dont always get it to come out right. Though I’m going to try again when we make this recipe in the future, homemade gravy just tastes so much better.
This recipe has an egg served on top but if you leave it off, it’s still very good and has the same flavor as if it remained. You can also make this with ground beef or ground turkey, but you could try it with a salmon patty or chicken patty if you cant have red meat, though i cant say how it will taste.
Loco Moco

- 2 Eggs
- 2 Tablespoons unsalted butter (divided use)
- ½ cup uncooked rice
For the Hamburger Patties:
- ½ pound ground beef
- ½ Tablespoons Worcestershire sauce
- ¼ teaspoon seasoning salt
- ½ teaspoon garlic powder
- ¼ teaspoon black pepper
For the Gravy:
- ¾ cup beef stock
- 2 teaspoon soy sauce
- ½ teaspoon Worcestershire sauce
- 1 teaspoon ketchup
- 2 ½ teaspoon cornstarch
- green onion for garnish (optional)
Directions
- Cook the rice in a sauce pan according to the package directions.
- At the same time, mix the ground beef, Worcestershire sauce, seasoning salt, garlic powder, and black pepper in a large bowl.
- Form the beef into two patties.
- Heat a skillet over medium heat. Fry each side of the patties for about 3-5 minutes or until done.
- Set the finished patties on a plate lined with paper towel to drain.
- In a sauce pan over low heat, mix the beef stock, soy sauce, Worcestershire sauce, ketchup, and cornstarch. Whisk until the cornstarch is mixed in.
- Add 1 tablespoon butter into the gravy mix in the pan. Keep stirring the gravy until it begins to thicken and simmer.
- Melt 1 tablespoon butter in a skillet over medium heat.
- Add two cracked eggs, sprinkle to taste with salt and pepper, and cook sunny side up (or over easy) keeping the yolks soft. Set aside
- Scoop the hot white rice onto two plates, divided evenly.
- Layer each with one hamburger patty, one egg, and then drizzle on the gravy. Top it with green onions, if desired. Serve it hot and enjoy!
