Mango BBQ Chicken

This week we for our Disney movie night, the kids picked Onward for their movie dinner theme. It’s an ok movie, I don’t really care for Chris patt, but the kids enjoy it’s funny nature.

Anyways, we make chicken drumsticks, jello, had cheese puffs and magic punch, which is just some peach syrup and sprite.

Thisbtecupe is for the chicken, and it was so good. The marinade was easy to throw together a few hours before dinner. The chicken was juicy and tender, and full of mango flavor.

Mango BBQ Chicken

prep-20min cook-20min serves 8

Ingredients

  • 1 medium Mango
  • 1/3c ketchup
  • 1/4c cider vinegar
  • 2Tbsp brown sugar
  • 1Tbsp tamari sauce or soy sauce
  • 1Tsp ginger
  • 1/2tsp Chinese five spice
  • 1/2stp turmeric
  • 3lbs chicken drumsticks
  • 1/4tsp salt

Directions

  1. Preheat theboven to 350

2. Combine the mango, ketchup, vinegar, brown sugar, tamari(soy sauce) ginger, five spice and turmeric. Place all in a blender and blend on high until smooth.

  • 1 medium Mango
  • 1/3c ketchup
  • 1/4c cider vinegar
  • 2Tbsp brown sugar
  • 1Tbsp tamari sauce or soy sauce
  • 1Tsp ginger
  • 1/2tsp Chinese five spice
  • 1/2stp turmeric
  • 3lbs chicken drumsticks
  • 1/4tsp salt

3. Reserve 1/2c for basting the chicken while grilling and use the rest for the marinade for the chicken.

4.oil grill, baking sheet or frying pan, however you choose to cook chicken.

5.place chicken on cooking instrument and cook, flipping occasionally until browned and crispy on all sides. About 5 min. Turn heat low and continue to cook until the inside is thoroughly cooked and thermometer reads 160 inside chicken.

6. Once cooked, brush chicken with basting marinade generously, and cook, turning occasionally while brushing with more sauce until slightly charred. About 5 min.

7. Drizzle chicken with honey and sprinkle on some salt and scallions if desired.

Notes

The recipe serves 8, but depending on your chicken sizes the marinade is enough to marinade more chicken and baste more chicken.
