I love sandwiches, i mean I really enjoy having a sandwich that I’ll usually have one several times a week. Salami and uncurled honey ham, are two of my go top options for sandwiches, unless I’m getting the number 9 at Jimmy John’s which has always been a favorite for our family.
But over the last few months my digestion has taken a turn. Though Chris is certain I’ve always been this way since I’ve never felt good after eating since i met him. I’ve really noticed a turn in how i feel after eating and how my body reacts to certain foods. Which lead me to finding out that I have IBS, and my body does much better on an ibs friendly diet.
Luckily this sandwich recipe is a safe food for me, as the sourdough bread doesn’t cause a reaction for me, like most other breads. I like to get my bread from Aldi, the regular sourdough kind. I will even buy Aldis brioch buns as theyre the only ones I’ve had that is safe for me aside from the Daves killer bread. Otherwise i can only eat the potato bread from martins and farmhouse.
I like to use pepper jelly from Walmart, for my sandwichs but some days I will switch it up with some blackberry jelly. But you could use any kind of jelly/jam that you like from raspberry to strawberry, apricot to peach. Even plum or rhubarb which are both pretty good.
I buy all if not most of my groceries from Aldi. So this is where I get my salami and prosciutto from, its great that I can but a large pack of mix salami that will last me a week or two depending on how much i use for sandwiches, pizza, avocado toast.
