Salad is one of my favorite recipes to make for lunch, as it’d so quick, easy, and I can prepare it the day before and insuslly hate meal prepping since everything gets so soggy.
But salad is great because there are so many different ways to dress it up from the protien to vegetables to adding fruit, cheese, and even nuts. Their are so many endless ways to dress up a salad that it’s great for all year around. I mean, you can make a salad for fall by adding fall staples like nuts and fall seasonal vegetables.
This salad is healthy, but it doesn’t leave you feeling as if uour missing out on anything. You let feeling satisfied and full, whether you have this 2 hours before a workout or after a workout for dinner or lunch.
The salad is crispy and crunchy from the salad to the chips, the beans, and vegetables. That dressing gives you a little kick that’s perfect while still being smooth and creamy without any harsh spice.
This salad is perfect. I loved having this when I’m not in the mood for anything, feeling tired, and just want something healthy to fill me up and keep me going, but it still tastes amazing.
Southwest Chicken Salad

Ingredients
- 1 lb cooked shredded chicken about 3 breasts
- 1 can (15.5 oz) black beans rinsed and drained
- 1 can (15.25 oz) corn drained
- 1-2 fresh jalapeños seeded, chopped
- ¾ cup cherry tomatoes quartered
- ½ cup red onion chopped
- ¼ cup pepitas
Dressing
- ¾ cup mayo
- ¼ cup fresh lime juice
- 1 tablespoon chili powder
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- ¼ teaspoon paprika
- ¼ teaspoon salt
Instructions
- Add all of the ingredients for the dressing into a medium bowl. Mix until combined.
- In a large bowl add the shredded chicken, black beans, corn, jalapeños, tomatoes, red onion, and pepitas.
- Pour the dressing over the ingredients and stir to combine.
- Serve on its own, in a sandwich or over lettuce. Enjoy!
