Sugar Free Egg Nog

I am not a big fan of eggnog, in fact I don’t eve. like the taste. But my kidd and husband have always loved eggnog, they’d go through several half gallons a week if i let them. They just love that stuff so much.

But the store bought stuff has so much sugar and just isn’t really thay great for my husband who has diabetes and my kids, especially then5yr who gets sick on a ton of sugar.

So I had to find a recipe that was low sugar or sugar free, and I think I have finally found a recipe that I’m assuming tastes good and everyone likes.

Prep time 5 mins

Cook Time 15 mins

 Yelds 4

Ingredients

  • 2 cups unsweetened almond milk or coconut milk
  • 1 cup heavy cream or canned coconut milk
  • 4 large egg yolks
  • ½ cup sweetener
  • 1 teaspoon freshly grated nutmeg
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1 cup  brandy, bourbon or dark rum, to taste

Directions

In a medium bowl add the egg yolks and sweetener. Whisk until completely dissolved.

Place a medium saucepan over medium heat, and add the almond, heavy cream, nutmeg, and cinnamon. Bring to a boil and stir occasionally.

Remove from the heat, and slowly incorporate the eggs into the hot milk.

Whisk constantly to avoid the egg curdle.

Return the mixture bake into the saucepan and whisk constantly until slightly tick and creamy.

Stir in the vanilla extract and the alcohol of your choice.

Pour the sugar-free eggnog into a glass container and refrigerate the mixture for at least 4 hours.

Serve cold topped with whipped cream and garnish with nutmeg and cinnamon.

Notes

If you want a keto dairy free eggnog option you can use sugar-free coconut cream instead of heavy cream. You can also add rum extract instead, to make it alcohol-free and kid-friendly.
